First Blender project discussion

I thought it pertinent we discuss what the first project should be in a separate thread.

The only way to do this is to get a grasp of where each of us is ultimately looking to go with Blender.

In my case, I'm looking to build, skin, rig and render my Twitch Channel Moose:


Having said that, I'm pretty open minded and eager to learn so let's hear what you're ideal end goals are.
 
I recently had a very strong desire to 3D render a fantasy landscape that I've been sketching out for years but that might be too complicated as a first project. Depending on the scale I decide to make it.

Just the landscape/skyline? Or go in and render all the hidden nooks and crannies?

My first project could just be exporting some VRoids I've made into blender and adding in details, features, and rigging that isn't already in the model. I'd like to make some shadow-creatures, or make a 3D humanoid avatar that's made of nebulas and galaxies.
 

I'm also partial to trying to make this one, mushrooms in a bottle. It tackles various features and the process looks simple enough through this tutorial.
